When someone mentions “safe grilling,” thoughts often turn to keeping children away from the flames or cautiously lighting the grill to avoid singed eyebrows. But in my household, safe grilling centers around one indispensable tool: the instant-read thermometer.

This device is essential for ensuring that meats are cooked to the right temperature, neither undercooked nor overdone. I keep several on hand, including one in our camper, to check multiple foods simultaneously.

What Is an Instant-Read Thermometer?

Unlike meat or candy thermometers, an instant-read thermometer provides quick temperature readings and isn’t designed to remain in the food during cooking. Insert it into the thickest part of the meat when you believe it’s nearly done. Remember, leaving the device inside the grill can damage it.  (Don’t ask how I know.)

Why Use One?

Using an instant-read thermometer helps prevent overcooked fish and undercooked burgers. It ensures that chicken breasts are juicy and steaks are cooked to your preferred temperature. According to the USDA, safe minimum internal temperatures are:

  • Ground meats (beef, pork, lamb, veal): 160°F (71°C)

  • Beef, pork, veal, lamb (steaks, chops, roasts): 145°F (63°C) with a 3-minute rest

  • All poultry (whole or ground): 165°F (74°C)

  • Fish and shellfish: 145°F (63°C)  

These temperatures ensure harmful bacteria are eliminated, making your meals safe to eat.

Affordable and Accessible

Instant-read thermometers are widely available in kitchen sections of major retailers, often priced around $10. Some easier-to-read digital ones are slightly more expensive but still available for under $20. You don’t need a fancy model; just one that’s reliable and easy to use.

Beyond the Basics

Grilling isn’t limited to hot dogs and burgers. Our grill sees year-round use, cooking everything from steaks and chicken to vegetables, fruits, and even pizzas. With a bit of oil or cooking spray, the possibilities are endless. Additionally, grilling helps keep the kitchen cool during the summer months.
